NOAA Fisheries Assistant Administrator Eric Schwaab has said that “Events such as the annual Seafood Cook-off are a terrific way to bring the message that U.S. seafood is healthy, safe, and good for you right to the public, especially those folks interested in new and creative ways to prepare seafood.” Florida Chef John Minas’ dish of seared grouper cheek is a great example of this as he uses a less common but very delicious part of the fish.
