ABSTRACT

The overall
goal of this project was to determine if improvements
reducing lipid oxidation in the production of mackerel
surimi which we achieved in the laboratory could be attained
in a pilot plant operation. Other goals were to
determine ways of improving the color of mackerel surimi,
to study the distribution of lipid-soluble antioxidants
in the polar and non-polar lipid fractions, to determine
the nature of the antioxidants in mackerel light and dark
muscle and their potential role in oxidation reactions,
and to develop means of separating light and dark muscle
tissue. The work demonstrated that the laboratory
technique of decreasing lipid oxidation could be achieved
on a pilot plant scale.
