ABSTRACT

This project
provides recipes, videos and a manual to help foodservice
and institutional feeding operators and others preparing
food away from home to adopt unfamiliar New England fish
species on to their menus. This away-from-home food preparation
sector now accounts for over 50% of U.S. food consumption,
is growing rapidly and is more receptive to new species
than the meals prepared at home sector. A website
provides information, materials order form and registration
for updated information. The contractor, New England Fisheries
Development Association, will maintain and update the
site. Information on species availability, seasonal factors,
and handling tips will be continually updated.
